Viognier in its purest form, authentic fruit.

It is ecological and made only with Viognier, variety considered the queen of the white ones, of difficult viticulture but exceptional results. In Cazalla de la Sierra, Sierra Morena Natural Park in Seville. Without DO.

We harvest the grapes by hand in mid-August, in vine stocks with more than 20 years, on trellis and strict dry land. On slopes with a loam clay soil where the red slate predominates.

We destem all the grapes, and crush them gently. They ferment in a stainless tank of up to 2,000 l. with a controlled temperature of 20ÂșC. They rest on its fermentation lees for 4 months in inox tanks. We filter it lightly and it remains in the bottle for a minimum of 2 months. Depending on the vintage, it usually has between 11.5 and 12.5% vol. And less than 1.5 g / l of residual sugar. We present it in a 750 ml burgundy bottle, lying in boxes of six.

It is a greenish yellow wine, very aromatic, tropical and exotic. It is pure banana with mineral notes. Fresh, broad and voluminous. It has good natural acidity and many pairings.


This vineyard is full of blackbirds, we are mad about them! PIU, the bird scarer, helps us. "Mirlo" are wines made with the grape variety Viognier, with or without wood.
